Kefir Made Simple

Kefir is a fermented milk made from a mix of kefir grains and yeast. It is comparable to a sour yogurt that is drinkable. It is packed with cultures that promote gut health and has such low lactose that it can be consumed by those with a lactose intolerance.

Ingredients:
Kefir Grains
Whole Milk.
Directions:
Use glass, plastic, and wood materials (NO Metal)
Place your kefir grain starter in a jar. Pour 1 cup of milk on top.
Cover with coffee filter and secure with a rubber band. Let sit at room temp. 68 - 78 degrees Fahrenheit.
After 24 hours the kefir should be activated.
If milk doesn't thicken after 24 hours, then move grains to a new batch of whole milk and repeat for another 24 hours. Do this until milk thickens into kefir. (video below)
5. Remove the kefir grain with a spoon, or strain into a new jar (with a plastic strainer). Store kefir in the refrigerator.
6. Place the kefir grain directly into a clean jar and cover with 1 qt. of milk to culture a new batch.
Now since you have activated the grains, you put them in a jar with more milk (1qt. vs 1 cup) and repeat all of the steps to continue to make kefir
To store your kefir grains, place them in 1 cup of milk in a sealed jar in the refrigerator. Just remember to strain them before starting a new batch or drinking the milk they were in.
