Crème Fraîche is a thinner sour cream full of healthful live active cultures that is prepared by culturing heavy whipping cream. It is an excellent addition to soups, sauces and your favorite French dish. Use in place of sour cream on baked potatoes or make a creamy dip for your vegetables, how about a creamy salad dressing. Sour Cream is extremely easy to make at home and also full of healthful live cultures.

Ingredients:
2 pints of good quality Heavy Whipping Cream
For Crème Fraiche
1 pack of Crème Fraiche starter, 1 tbsp. Crème Fraiche from the previous batch, or 1 tbsp. of Whole-Milk Buttermilk,
For Sour Cream
1 pack of Sour Cream Starter, 1 tbsp. of Sour Cream from the previous batch, 1 tbsp. of Whole Buttermilk
Directions:
Slowly Heat Cream to about 86 degrees
Place cream in a clean glass container.
Add starter, previous batch, or buttermilk and stir well.
Seal the container with a coffee filter and secure with a rubber band.
Place in a warm spot in the kitchen
Sour Cream for 12-24 hours (check consistency)
Crème Fraiche for ~12 hours
